Skillet Garlic Butter Herb Steak and Potatoes
Description
In this recipe, diced Yukon Gold potatoes are sautéed in olive oil and butter with fresh thyme, rosemary, oregano, and minced garlic until fork-tender and slightly crisp. The seasoned New York strip steaks are then cooked in the same skillet, allowing the meat to develop a brown crust at high heat before finishing to desired doneness at medium-high heat with repeated flipping.
The garlic butter compound, made from softened butter combined with the same fresh herbs and garlic, is prepared separately and can be added over the steaks just before serving to enhance flavor and moistness. This method maintains a balance of textures between the tender potatoes and the flavorful, juicy steak.
This dish serves well as a complete dinner, pairing harmoniously with simple sides or salad. Using fresh herbs throughout ties the flavors consistently from potatoes to steak, while cooking mostly in one skillet reduces cleanup.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter unsalted
- 1 pound Yukon Gold potato 1/2-inch cubes, chopped
- 3 teaspoons garlic 3 cloves, minced
- 1 teaspoon thyme chopped fresh
- 1 teaspoon rosemary chopped, fresh
- 1 teaspoon oregano fresh, chopped
- 2 New York Strip steak lean
- salt to taste
- black pepper to taste
Garlic Butter Compound
- ¼ cup butter softened
- 3 teaspoons garlic 3 cloves, minced
- 1 teaspoon thyme chopped fresh
- 1 teaspoon rosemary chopped, fresh
- 1 teaspoon oregano fresh, chopped
Instructions
- In a large cast iron skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon unsalted butter, 1 pound chopped Yukon gold potatoes, 3 teaspoons minced garlic, 1 teaspoon chopped fresh thyme, 1 teaspoon chopped fresh rosemary, and 1 teaspoon chopped fresh oregano. Cook for about 3 minutes. Stir and cook an additional 3-5 minutes or until fork tender. Remove and set aside on a plate.
- Season 2 lean New York steak strip steaks with salt and pepper on both sides. Increase the heat to high and add the seasoned steaks to the same skillet. Cook for 3 minutes on each side or until the outside is browned. Reduce the heat to medium-high. Cook the steaks to desired doneness. Mine took about 10 minutes flipping 3 times to get it medium well done.
- Combine ¼ cup softened butter, 3 teaspoons minced garlic, 1 teaspoon chopped fresh thyme, 1 teaspoon chopped fresh rosemary, and 1 teaspoon chopped fresh oregano in a small bowl. Stir thoroughly until combined.
- Slather the top of the steaks with the compound butter. Add the potatoes back to the pan and heat through allowing the butter to melt into the steaks.
