Description
Skillet Hash Browns bring together diced onions, green and red bell peppers, and sliced mushrooms sautéed in olive oil, layered with fully cooked chicken sausage cut into small pieces and enhanced by taco seasoning. Separately, shredded hash browns are cooked in a cast iron skillet until crispy, then combined with the sautéed mixture for a unified dish. This method balances the soft, sautéed vegetables and sausage with golden, crispy hash browns, offering a variety of textures in each bite.
The use of taco seasoning imparts a mild, smoky spice that complements the savory notes of the sausage and vegetables. The dish works well served warm for breakfast or brunch and can be adapted by varying the bell pepper colors or adding heat with jalapenos as desired.
Choosing andouille chicken sausage or any cooked sausage adds flexibility, and using a cast iron skillet enhances the crispiness of the hash browns. The recipe encourages customization with pepper choices and optional heat for personal taste.
Ingredients
- 4 tbsp olive oil Divided
- 1 onion Diced
- 1 green bell pepper Diced
- 1 red bell pepper Diced
- 5 oz mushrooms Sliced
- 12 oz chicken sausage links fully cooked
- 1 tsp taco seasoning
- 2 packs shredded hash browns Simply Potatoes® brand
Instructions
- Heat 2 tbsp olive oil in a skillet. Once hot, saute the onion until translucent.
- Next, add in diced green and red bell peppers. Saute until they're soft and shiny.
- Add in mushrooms and stir. Let them cook for 5 minutes.
- Cut each sausage link into half lengthwise. Then cut each half into 3 pieces lengthwise. Cut each piece into 1/4" pieces.
- Add sausage into the skillet and cook for 10 minutes.
- Next, add in taco spice and mix well.
- In a cast iron skillet, heat 2 tbsp olive oil and saute Simply Potatoes® Shredded Hash Browns until fully cooked and crispy.
- Add the hash browns to cast iron skillet and mix with the sausage and vegetables.
- Serve warm.
Notes
- Bell pepper colors can be varied; red, green, orange, or yellow all work well.
- Add jalapeno peppers to increase the dish’s heat level.
- Any fully cooked sausage, such as andouille chicken sausage, can be used interchangeably.
