Skillet Lemon Chicken

Skillet Lemon Chicken uses browned chicken thighs cooked in a garlic butter sauce with chicken broth, white wine, and lemon juice. The technique creates tender chicken coated in a tangy, rich sauce enhanced by fresh parsley. This recipe balances acidity and savoriness, making it a satisfying main dish that can be served quickly after cooking. The pan sauce absorbs the flavor of the chicken, providing a moist and flavorful result.

Description

Skillet Lemon Chicken combines pan-seared chicken thighs with a lemon-infused sauce made from garlic, chicken broth, white wine, and lemon juice. After browning the chicken to develop a golden crust, the sauce ingredients are added to the same skillet, allowing the meat to finish cooking gently and absorb the bright, savory flavors. The use of butter and olive oil creates a rich base, while the lemon juice adds a fresh acidity that brightens the dish. Lightly smashed garlic cloves add a mellow garlic fragrance without overpowering the sauce.

Cooking covered at low heat lets the chicken cook through without drying out, while occasional turning helps evenly coat it with sauce. Chopped parsley adds a fresh herbal note at the end. This dish works well as a simple dinner served alongside vegetables, rice, or potatoes that can absorb the flavorful sauce.

Ingredients

Servings
  • 2 lbs (1kg) chicken thighs
  • salt
  • black pepper ground
  • 1/2 tablespoon olive oil
  • 2 tablespoons butter unsalted
  • 6 cloves garlic lightly smashed
  • 3/4 cup chicken broth
  • 1/4 cup white wine
  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 tablespoon parsley chopped leaves

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat a skillet and grease it with olive oil. Pan-fry the chicken on both sides until nicely browned, but not cooked through. Set aside on a plate.
  3. Add the butter to the skillet and sauté the garlic. Return the chicken to the skillet (including the juices that have accumulated), followed by the chicken broth, wine, lemon juice, and salt.
  4. Lower the heat, cover the skillet, and let it cook for about 10 minutes, turning the chicken over at the 5-minute mark. Top with chopped parsley, turn off the heat, and serve immediately.
