Skillet Pork Chops with Maple Dijon Vegetables

Ingredients

  • 1 (1.34-pounds) pork loin cut into one inch slices, package, Smithfield brand
  • 3 tablespoon olive oil divided
  • salt
  • black pepper
  • ½ pound Brussels sprouts quartered
  • 2 sweet potato cut into 1 inch cubes
  • ½ pound red potatoes quartered, baby
  • ¼ cup Dijon mustard
  • cup maple syrup
  • 1 tbsp apple cider vinegar

Instructions

  1. In a large skillet, add 1 tablespoon olive oil. Add the sliced pork and cook until no longer pink, about 4-5 minutes on each side. Remove and set aside on a plate.
  2. Add the remaining 2 tablespoons of olive oil. Add Brussels sprouts, sweet potatoes, and baby potatoes. Sauté until almost fork tender, about 8 minutes.
  3. Whisk together the Dijon mustard, maple syrup, and apple cider vinegar in a small bowl. Pour on top of the vegetables and toss to coat.
  4. Add the pork back to the skillet and heat throughout. Serve warm and enjoy!
