Skillet Squash Medley

Skillet Squash Medley combines zucchini, yellow squash, and ripe tomatoes sautéed with onions, garlic, and olive oil, then finished with freshly grated Parmesan cheese. The result is a tender vegetable dish where the squash softens but retains slight bite, balanced by the sweetness of tomatoes and the savory richness of Parmesan. This simple sauté highlights fresh produce and can serve as a light side or vegetable accompaniment to many meals.

Description

The recipe uses olive oil to gently sauté finely minced garlic and chopped onion until translucent and aromatic. Adding slices of zucchini and yellow squash, the vegetables cook just enough to become tender while maintaining texture. Chopped ripe tomatoes break down slightly during the final minutes, creating a subtle saucy base mixed with the cooking juices.

Finishing by tossing in freshly grated Parmesan cheese adds a salty, creamy layer that complements the vegetable flavors. The dish delivers a balance of mild sweetness from the squash, sharpness from the garlic and onion, and umami from the cheese. The medley cooks quickly on the stovetop, preserving the freshness and color of the squash.

Skillet Squash Medley makes a versatile side dish suitable for pairing with fish, chicken, or grilled meats. It can also be enjoyed as part of a vegetarian meal or tossed into pasta. Serving immediately preserves its bright flavors and tender texture.
