Description
The recipe starts by bringing steaks to room temperature and seasoning them with a blend of salt, black and white pepper, onion powder, and garlic powder for a well-rounded flavor coating. The steaks are seared on both sides and rendered on the sides in a hot, oven-safe skillet with vegetable oil and butter to form a savory crust.
Following the sear, mushrooms and asparagus are added to the skillet and cooked with remaining butter, seasoned with salt and pepper to absorb the steak juices and seasoning. The skillet method ensures the vegetables gain a slight caramelization while maintaining texture.

Ingredients
- 2 New York steak 2 inches thick
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon vegetable oil
- 2 tablespoons butter divided
Vegetables
- 4 ounces white mushrooms quartered, or cremini mushrooms
- 1/2 pound asparagus trimmed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Remove 2 New York steaks from the refrigerator and any packaging and let sit at room temperature on a plate or cutting board for at least 30 minutes.
- In a small bowl, stir together 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon white pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder. Rub both sides of each steak with the rub mixture to coat.
- Preheat oven to 375 degrees Fahrenheit. Preheat a heavy, oven-safe skillet over high heat until it is smoking hot.
- Add in 1 tablespoon vegetable oil and 1 tablespoon butter. Sear steaks in the hot pan for 2-3 minutes per side. Turn the steak onto its side and render the fat by searing it for 2-3 minutes as well. Remove steaks from pan and set aside briefly on a clean plate.
- Add in the remaining 1 tablespoon butter to the skillet. Add in the quartered 4 ounces white or cremini mushrooms and 1/2 pound asparagus. Season with 1/4 teaspoon salt1/4 teaspoon black pepper and toss in the oil and butter over medium-high heat for 2 minutes. Scoot the vegetables to the side and return the steaks to the pan.
- Slide the skillet into the preheated oven to finish cooking, about 10-15 minutes for medium rare, depending on the exact size and thickness of your steak. Use a meat thermometer to ensure accuracy.
