Skin-On Peanut Butter Recipe

This Skin-On Peanut Butter Recipe uses roasted peanuts with their skins intact, blended into a smooth and creamy butter. The roasting process enhances the peanut flavor and softens the skins, which contributes a slightly rustic texture and earthy taste. Using a powerful blender with a tamper helps achieve the right smoothness efficiently.

Description

Skin-On Peanut Butter Recipe centers on roasting skin-on peanuts until fragrant, then blending them into a creamy peanut butter. The peanuts' skins remain, providing a distinct texture and a deeper, earthy peanut taste. Roasting times vary depending on batch size, ensuring the nuts are neither underdone nor burnt. The recipe suggests using a Vitamix blender for best results, as its powerful motor and tamper efficiently break down the peanuts into a smooth paste without frequent interruptions. The optional additions of fine salt and brown sugar allow you to customize the balance between savory and sweet. This peanut butter can be enjoyed on toast, in baking, or as a snack ingredient, retaining a characteristic peanut aroma enhanced by the skins.

Ingredients

Servings
  • 4 cups peanuts skin-on
  • 1 tsp fine salt optional, or 1/2 tbsp kosher salt
  • 2 tbsp brown sugar (*optional)

Instructions

  1. If using raw peanuts, first roast them: in the air fryer at 160 °C (320 °F) for 18 minutes, or oven at 175 °C (350 °F) for 20 minutes, tossing twice. (See Note 2.)
  2. Add all the roasted and cooled peanuts to a Vitamix blender. Blend on high speed for 2 minutes, using the tamper to continuously push down the peanuts until they have turned into a smooth peanut butter.

Notes

  • Use a high-powered blender with a tamper for the smoothest peanut butter and easiest processing.
  • Roast peanuts evenly and watch closely to avoid burning, especially in smaller batches where roasting time is shorter.
  • Adjust salt and brown sugar amounts to taste; these are optional and customizable.
