Description
This version of the pina colada uses pineapple chunks, either fresh or frozen, blended with a measured amount of Bacardi rum, light canned coconut milk shaken before measuring, freshly squeezed lime juice, and crushed ice. The ingredients are combined in a high-speed blender and processed until smooth and creamy. Adjusting the coconut milk amount affects drink consistency, while adding more frozen pineapple or ice thickens it.

Ingredients
- 1 cup pineapple fresh or store-bought, frozen chunks
- 2 ounces rum about ¼ cup, Bacardi brand
- ¼ - ⅓ cup coconut milk shake it before measuring, light, canned
- ½ ounce lime juice about 1 tbsp, fresh
- ¼ cup ice cubes crushed is best but cubes work
- pineapple fresh pieces, for garnish
Instructions
- Add all ingredients to a high-speed blender. Start with ¼ cup of canned coconut milk, you can always add more if you want your pina colada to be thinner.
- Blend until smooth and creamy. For a thinner pina colada, add more coconut milk. For a thicker pina colada, add a bit more frozen pineapple chunks or a few ice cubes.
- Pour into a glass and enjoy!
