Skinny Banana Muffins

Skinny Banana Muffins combine whole wheat and all-purpose flours with mashed ripe bananas, maple syrup, and light olive oil for a moist texture and mild sweetness. Warm spices like cinnamon and nutmeg add depth while egg whites and vanilla provide structure and flavor. Baked in mini tins, these muffins are tender and slightly spiced, suitable for a light snack or breakfast bite.

Description

This muffin recipe blends whole wheat and all-purpose flour with baking soda, cinnamon, nutmeg, and a touch of salt. The wet ingredients include mashed ripe bananas, maple syrup as the sweetener, light olive oil for moisture, egg whites for binding, and vanilla for aromatic flavor. The batter is mixed until just combined to avoid overworking and baked in mini muffin tins at 350°F for about 10 minutes.

The resulting muffins have a tender crumb with subtle banana flavor complemented by cinnamon and nutmeg warmth. Their small size makes them convenient for portion control or sharing. The absence of heavy fats keeps the overall texture light yet satisfying.

Serve these muffins warm or at room temperature. They can be stored at room temperature for up to three days, making them practical for quick snacks or breakfast on busy mornings.
