Skinny Broccoli Slaw

Skinny Broccoli Slaw combines chopped broccoli florets, shredded red cabbage and carrots, finely minced sweet onion, and raisins to offer a crisp, colorful salad. The dressing made with Greek yogurt, apple cider vinegar, lemon juice, sugar, celery seed, salt, and pepper blends tangy and slightly sweet flavors to complement the crunchy vegetables and sweet raisins. Chilling before serving helps the flavors meld in this refreshing slaw.

Description

Skinny Broccoli Slaw uses fresh broccoli florets, crisp shredded red cabbage and carrot, minced sweet onion, and raisins for texture and natural sweetness. The coleslaw dressing is a creamy blend of non-fat plain Greek yogurt, apple cider vinegar, fresh lemon juice, granulated sugar, ground celery seed, salt, and black pepper. Whisked together, it offers a bright, lightly tangy coating that enhances the vegetables without heavy calories.

Once combined, the salad is tossed thoroughly and refrigerated for at least two hours, allowing the dressing to penetrate the slaw while softening the onions slightly. The finished dish offers crunchy vegetables with sweet notes from raisins and a balanced, fresh-tasting dressing. It's a light side salad suitable for meals needing a fresh vegetable accompaniment.
