Skinny Cheesy Potato Casserole

This Skinny Cheesy Potato Casserole features shredded russet potatoes blended with low-fat cream cheese, Greek yogurt, and milk, creating a lighter creamy base. The addition of green onions adds freshness, while mozzarella and sharp cheddar cheese provide a melded cheesy topping. Baking until bubbly and golden results in a comforting dish with tender, slightly textured potatoes and melted cheese. It is suitable as a side dish for family meals when a lower-fat potato casserole is desired.

Description

Skinny Cheesy Potato Casserole combines shredded russet potatoes with a mixture of light dairy ingredients including cream cheese and Greek yogurt, yielding a creamy yet lighter texture than traditional casseroles. The green onions introduce a mild bite, complementing the sharpness from mozzarella and cheddar cheeses that crown the dish. The potatoes are precooked until nearly tender, then shredded to preserve some texture after baking. The casserole is baked until the cheese melts and bubbles, forming a slightly browned cheesy top while keeping the interior creamy but not overly dense.

The flavor balances the natural earthiness of russet potatoes with tang from the yogurt and sharp cheddar, creating a comforting but less heavy side dish option. This casserole works well alongside roasted meats or as part of a holiday meal. It can serve a family or small group, offering a lower-calorie alternative to classic cheesy potato bakes.

Ingredients

Servings
  • 3 1/2 pounds russet potato washed and peeled
  • 1/2 cup green onion finely chopped
  • 1 tablespoon butter melted
  • 2 ounces cream cheese room temperature, low fat
  • 1 1/2 cups Greek yogurt plain, 2% or non-fat
  • 1/2 cup milk low fat
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 3/4 cup mozzarella cheese divided, shredded, part skim
  • 3/4 cup cheddar cheese divided, shredded sharp

Instructions

  1. Spray a 3 quart casserole dish or a 9x13 dish with cooking oil and set aside.
  2. Wash and peel the potatoes, then cut them in half and add them to a large pot of salted water. Bring the potatoes to a boil and cook for 8-10 minutes. They should be nearly tender, but still have some bite to them. Let the potatoes cool until you are able to handle them, then using a box grater shred them using the largest grate.
  3. In a large bowl whisk together the melted butter, cream cheese, Greek yogurt, milk, salt, and pepper. Add in the shredded potatoes, green onions, and 1/2 a cup each of the shredded mozzarella and cheddar cheese. Taste for seasoning and add more salt if needed.
  4. Fold everything together until combined then pour the potatoes into the prepared casserole dish. Top with the remaining cheese. Bake the potatoes at 375° F. for about 30 minutes or until the cheese is melted and bubbly.
