Description

This version of Fettuccine Alfredo begins by gently melting butter and simmering diced garlic to develop flavor. Flour is stirred in to create a roux, which is the base for the sauce. Chicken broth and 1% milk are gradually added while whisking to achieve a smooth, thickened consistency. After the sauce has thickened over several minutes, Parmesan cheese is stirred in for its distinctive cheesy taste and silky texture.

Fettuccine noodles are cooked separately in salted boiling water following package directions to al dente and then tossed with the Alfredo sauce to coat evenly. Optional Italian parsley and extra Parmesan can be added as garnish to introduce fresh color and herbaceous notes to the dish.

  • 1 Tablespoon butter
  • 1 garlic finely diced (may use two, clove
  • 2 Tablespoons flour
  • 1 cup chicken broth
  • 1 cup milk 1% fat
  • 3/4 cup Parmesan Cheese grated or shaved, high-quality
  • 1/4 - 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Italian parsley diced, optional as garnish
  • 9 - 12 oz fettuccine noodles package

Instructions

  1. In skillet, over medium heat, add butter and let it begin to melt. Stir in diced garlic and let simmer for 1 minute.
  2. Stir in flour and stir quickly to form a paste.
  3. Quickly stir in chicken broth and use whisk to remove any lumps.
  4. Stir in 1% milk. Let simmer for 6-8 minutes or until it starts to thicken.
  5. Turn heat to medium-low and add parmesan cheese and salt and pepper, to taste.
  6. Remove from heat and let thicken. Taste and add more salt, if needed.
  7. Meanwhile, place water in large pot and bring to boil. Generously salt boiling water.
  8. Add fettuccine and cook according to package instructions.
  9. Toss fettuccine with alfredo sauce and top with parsley and parmesan cheese, if so desired.

Notes

  • Select genuine, refrigerated Parmesan cheese for better flavor and melting quality.
