Ingredients
- 2 cups rolled oats (160 grams)
- 1 coop whey protein powder 32 grams, whipped vanilla flavor, Cellucor brand
- 1 coop casein protein powder 34 grams, vanilla flavor, Dymatize Elite brand
- 1/2 cup dark chocolate 70 grams, 62% cacao, cut into chunks
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup applesauce 244 grams, unsweetened
- 1 cup banana 150 grams, diced
- 3/4 cup almond milk 6 fl oz, unsweetened vanilla
- 2 egg white
- 3 tbsp maple syrup (1.5 fl oz)
- 2 tbsp peanut butter 32 grams, natural, melted, Skippy brand
- 1 tsp vanilla extract
- walnut 3 tbsp crushed, optional
Instructions
- Pre-heat oven to 350 degrees. Arrange 7 jumbo silicone baking cups on a small baking sheet. Set aside.
- Mix dry ingredients, then add wet ingredients and mix until just combined. Divide mixture evenly into silicone baking cups.
- Bake at 350 degrees for 35 minutes or until a toothpick inserted into the center of a muffin comes out clean. Add walnuts on top halfway through baking, if desired.
