Skinny Pulled Crockpot BBQ Chicken

Skinny Pulled Crockpot BBQ Chicken uses boneless, skinless chicken breasts seasoned with smoked paprika, garlic powder, salt, and pepper, layered with sliced onions and smashed garlic. It's simmered low and slow in a sauce made from tomato sauce, balsamic vinegar, and brown sugar in a slow cooker until it becomes tender enough to shred. The shredded chicken is returned to the sauce to absorb its tangy, smoky flavors.

Description

This Skinny Pulled Crockpot BBQ Chicken recipe starts by rubbing chicken breast with simple dry spices including kosher salt, smoked paprika, garlic powder, and black pepper. The chicken is placed in a slow cooker layered with thinly sliced yellow onion and crushed garlic cloves. A sauce of canned tomato sauce, balsamic vinegar, and lightly packed brown sugar is poured over to create a sweet and tangy base.

The dish cooks on low for 5-7 hours or high for 3-4 hours, during which the chicken absorbs the smoky and savory flavors and becomes tender enough to shred using forks. Returning the shredded meat to the sauce ensures it remains moist and flavorful.

It can be served on whole wheat buns for sandwiches, in lettuce cups for a lighter option, or simply on its own. The slow cooker method allows hands-off cooking while delivering tender pulled chicken with a rich, balanced taste.
