Slaw Dressing - with a Kick!

This Slaw Dressing with a Kick! is a creamy, tangy sauce made from silken tofu blended with Dijon mustard, red wine vinegar, agave nectar, salt, cayenne pepper, and olive oil. The combination creates a smooth dressing with balanced acidity, sweetness, and a subtle spicy heat. It's ideal for adding moisture and flavor to coleslaw or leafy salads, enhancing texture without overpowering other ingredients.

Description

The slaw dressing blends silken tofu and Dijon mustard with red wine vinegar and a touch of agave nectar for sweetness. Seasoned with salt and cayenne pepper, it provides a subtle spicy note. Slowly incorporating olive oil while blending emulsifies the dressing for a creamy and cohesive texture without separation. This method ensures a smooth consistency ideal for coating raw cabbage or leafy greens.

The dressing's balance of acidity, mild sweetness, and spice complements crunchy vegetables, lending moisture and a hint of heat without heaviness. It's suitable for adding depth to slaws or light salads, delivering flavor and creaminess in a plant-based form.

Use the dressing immediately or store it chilled. Shake well before use to redistribute flavors and restore texture. Taste and adjust salt or seasoning after blending, ideally sampling with salad greens to gauge the final balance.

Ingredients

Servings
  • 1/4 cup silken tofu
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 teaspoon agave nectar or cane sugar
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Put all the ingredients except for the olive oil in an upright blender and start blending.
  2. Once you've started blending, slowly add the oil. Ideally, it's being poured into the blender in the thinnest stream from your tablespoons as possible. Blend until smooth.

Notes

  • Pour olive oil slowly in a thin stream while blending to achieve ideal dressing consistency.
  • Label homemade dressing with its preparation date for freshness tracking.
  • Taste dressing with a lettuce or cabbage leaf before seasoning to balance flavors well.
  • Shake the dressing well before each use to recombine ingredients and maintain smooth texture.
