Ingredients
- 1 lb. ground beef 96% lean
- 1 yellow bell pepper diced, medium, 140g

- 1 .2-oz. buttermilk biscuits Grands homestyle, 5 count, can
Sloppy Joe Sauce:
- 1 oz. tomato sauce I recommend Muir Glen brand, canned, 226g
- 1/2 cup ketchup I used G Hugh’s, sugar-free, 120g
- 2 cloves garlic minced
- 2 Tbsp Worcestershire sauce 30g
- 1 Tbsp brown sugar
- 2 tsp mustard powder dry
- 1 tsp onion powder
Instructions
- Preheat the oven to 350 degrees F. Spray a 8x11” baking dish with cooking spray (a 9x13” also works). Start by washing and preparing your veggies.
- To a large skillet, add the ground beef and season with salt and pepper to taste. Cook on medium heat, stirring frequently and breaking into smaller pieces as you go, until beef is no longer pink. Transfer the cooked beef to a large mixing bowl.
- Spray the same skillet with cooking spray. Add the diced pepper, onions and mushrooms and cook on medium heat until veggies are tender, about 6-7 minutes. Transfer the veggies to the same large mixing bowl with the beef.
- To a separate mixing bowl, add all the sloppy joe sauce ingredients. Whisk to combine. Pour sauce into the bowl with the beef and veggies and stir to combine.
- Add sloppy joe mixture to the prepared baking dish. Sprinkle cheese evenly across.
- Cut each biscuit into four pieces and place evenly across the top.
- Bake for 25 minutes*, or until the tops of biscuits are golden brown.
Notes
- If you prefer fully cooked biscuits, flip and bake for an additional 10-15 minutes or broil for a minute to brown the tops.
- Alternatively, bake the biscuits separately and add the cooked pieces to the sloppy joe mixture just before serving.
