Sloppy Joe Casserole
Description
Sloppy Joe Casserole brings together key ingredients from the classic Sloppy Joe sandwich in a comforting baked pasta format. Ground beef is browned with diced onions and garlic, then simmered with ketchup, brown sugar, yellow mustard, and Worcestershire sauce to create a balanced sauce with tang, sweetness, and umami. Cubed Velveeta cheese is stirred in to melt smoothly into the mixture, adding creaminess.
Farfalle pasta cooked al dente is carefully folded into the beef mixture to preserve its shape. This combination is then baked covered to meld flavors, followed by a final bake uncovered with shredded Colby jack cheese for a golden cheesy top. The dish features tender pasta coated in a moist, flavorful sauce enriched by two types of cheese.
This casserole can be served as a main dish, satisfying on its own with a rich, saucy profile reminiscent of Sloppy Joe sandwiches. It’s suitable for family dinners where a warm, filling meal is desired.
Variations in pasta like penne or rotini work well for texture variety. Leftovers keep nicely refrigerated up to five days, making it practical for meal planning.
Ingredients
- 1 pound ground beef
- 1/2 white onion diced
- 1 Tablespoon garlic minced
- 1/2 cup ketchup
- 2 Tablespoons brown sugar
- 1 Tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- 12 oz farfalle pasta
- 8 oz Velveeta cheese cubed
- 8 oz Colby jack cheese shredded
Instructions
- Preheat the oven to 375 degrees F and spray a 9X13 baking pan with a non-stick cooking spray.
- Brown the ground beef with the diced onions in a large pan over medium high heat. Crumble the ground beef as you cook it. Once the beef is browned, drain off any excess grease.
- Then add in the minced garlic and cook for 1-2 minutes over medium heat until the garlic is aromatic. Stir in the ketchup, brown sugar, yellow mustard and Worcestershire sauce. Stir to combine and simmer for a few minutes.
- Add in the diced Velveeta cheese. Stir and heat on low until the cheese is melted and combined with the other ingredients.
- Cook the pasta in a separate saucepan to al dente based on the package instructions. Drain and stir the pasta into the meat mixture being careful not to break the noodles.
- Pour the mixture into the 9X13 baking dish and cover with foil. Bake for 15 minutes.
- Then remove the foil, top with the shredded colby jack cheese.
- Bake for 10-15 more minutes until the cheese is melted and the edges start to brown.
- Serve warm and enjoy!
Notes
- Penne or rotini pasta are good alternatives to farfalle in this casserole.
- Store leftovers in an airtight container in the refrigerator and consume within 5 days.
