Sloppy Joe Casserole

The Sloppy Joe Casserole mixes browned lean ground beef, sautéed onions, and green bell peppers with a tangy tomato-based sauce flavored with mustard, garlic powder, smoked paprika, and Worcestershire sauce. This mixture is spread in a casserole dish, layered with cheddar cheese and frozen tater tots, then baked to combine hearty, savory elements with a crispy topping.

Description

Sloppy Joe Casserole starts by browning lean ground beef, then cooking it with onions and green bell peppers to soften the vegetables. It is seasoned with a combination of ketchup, mustard, garlic powder, smoked paprika, red pepper flakes, Worcestershire sauce, vinegar, and beef broth. This sauce-based meat mixture provides rich savory flavor with a mild smoky and slightly tangy profile.

The casserole base is topped with shredded cheddar cheese giving a creamy, melty finish under the crisp layer of arranged frozen tater tots. Baking melds the flavors and creates a contrasting texture between the tender filling and crispy potato topping.

This dish serves 6 to 8 and can be a comforting family meal. Since the ingredients can be somewhat salty, additional salt should be added carefully, especially if using regular beef broth. Tater tot package sizes vary, so adjust quantity as needed to cover evenly.

Ingredients

Servings
  • 1 pound ground beef lean
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 3/4 cup tomato ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes optional, crushed
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon white vinegar
  • 1/2 cup beef broth or water
  • 2 cups cheddar cheese grated
  • 32 ounces tater tots see note, frozen
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat your oven to 375F and move the rack to the top third of the oven.
  2. Add the beef to a skillet and cook over medium-high heat until browned, breaking it up with your spoon as you go along (about 10 minutes). I don't drain the fat if using lean beef, but feel free to drain some if you're using regular and there's a lot of excess fat.
  3. Stir in the onions and peppers and cook for another 5 minutes, stirring occasionally.
  4. Reduce the heat to medium and add in the ketchup, mustard, garlic powder, smoked paprika, red pepper flakes, Worcestershire sauce, vinegar, and beef broth. Give it a good stir and let it warm through (about 2-3 minutes - don't let it get too dry).
  5. Transfer the mixture to a 9x13 casserole dish and spread it out in an even layer. Optional: if you have a large oven-safe skillet, feel free to make the casserole entirely in the skillet.
  6. Top with one cup of the cheddar.
  7. Arrange the tater tots on top and bake, uncovered, for 45 minutes.
  8. Sprinkle the remaining cheese on top and pop it back in the oven for another 5 minutes or until the cheese is nice and melty. Serve immediately with extra salt & pepper if needed.

Notes

  • Use about 32 ounces of frozen tater tots, adjusting quantity to fit your casserole dish.
  • Check salt levels carefully before adding extra, as the sauce and broth contribute saltiness.
  • This recipe serves 6 to 8 people, making it suitable for family dinners or gatherings.
