Sloppy Joe Nachos

Ingredients

  • 1 tbsp olive oil
  • 1 cup red onion diced
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • 1 lb ground turkey
  • 2 tbsp taco seasoning click link for recipe
  • 2 tbsp hot sauce
  • 6 oz tomato paste
  • 10 oz diced tomatoes with green chilies canned
  • ½ cup chicken broth
  • 1 potato chips brand: Ruffles
  • 3-4 cups pepper jack cheese shredded
  • 1 ½ cups jalapeños pickled

Optional Toppings

  • diced tomatoes
  • avocado diced
  • cilantro fresh
  • sour cream
  • hot sauce

Instructions

  1. Preheat the oven to 400°F.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion and bell peppers, saute 5-7 minutes.
  4. Add the ground turkey and cook through.
  5. Drain any grease from the skillet, then return to the stove and add the taco seasoning, hot sauce, tomato paste, diced tomatoes with green chilies and chicken broth.
  6. Combine well, reduce heat to low and simmer for 15 minutes.
  7. Spread the ruffles chips evenly on a rectangular baking dish or sheet pan.
  8. Top with the sloppy joes, pepper jack cheese and pickled jalapenos.
  9. Pop in the oven for 10 minutes.
  10. Remove from the oven and top with the optional toppings of your choice.
