Sloppy Joe Tater Tot Casserole

Sloppy Joe Tater Tot Casserole layers a savory ground beef mixture with diced red bell pepper, sweet onion, corn, and sloppy joe sauce blended with cream cheese for richness. This filling is topped with cheddar cheese, then covered by a crispy layer of tater tots baked until golden. The dish is finished with fresh chives for a mild oniony touch, making it a comforting, hearty casserole.

Description

This casserole starts with browning ground beef combined with diced red bell pepper and sweet onion for a savory base. Adding canned corn and sloppy joe sauce mixed with cream cheese creates a creamy and flavorful filling that binds the ingredients together well.

The meat mixture is spread in a baking dish, layered with half the grated cheddar cheese for melting richness, and topped with tater tots arranged in a single layer. Covered with the remaining cheese, the casserole is baked at a high temperature until the tater tots turn crispy and golden, and the cheese is bubbly.

Sprinkling chopped chives on top after baking adds a fresh, mild flavor and a pop of color. This casserole delivers a combination of textures from the creamy, saucy meat filling to the crunchy tater tot topping, suitable as a satisfying main dish.
