Slow Cooker Baby Back Ribs
Description
Baby back ribs are trimmed and have the membrane removed to make them easier to pull apart after cooking. A dry rub made from brown sugar, chili powder, smoked paprika, thyme, kosher salt, black pepper, and cayenne is applied evenly to impart a mix of sweet, smoky, herbaceous, and mildly spicy flavors. The ribs are placed in a slow cooker coated with non-stick spray and cooked on low for 7 to 8 hours, until tender.
After slow cooking, the ribs are coated with an easy BBQ sauce recipe and caramelized under a low broiler or in the slow cooker on high to develop a sticky, flavorful crust. The ribs are served immediately with additional BBQ sauce if desired.
Membrane removal is recommended but not required, as ribs remain tender either way. The ribs can be seasoned with the rub up to 12 hours before cooking, kept refrigerated. BBQ sauce can be prepared ahead and stored refrigerated for up to 5 days. Avoid slow cooking beyond 8 hours to prevent burning or overly soft meat.
Ingredients
- Non-stick cooking spray
- 2 tablespoon brown sugar light or dark
- 1 tablespoon chili powder
- 2 teaspoon smoked paprika
- ½ teaspoon thyme dried, ground
- 1 teaspoon kosher salt
- ½ teaspoon black pepper ground
- ⅛ teaspoon cayenne pepper
- 3 to 3 ½ lb baby back ribs trimmed and membrane removed from the back of the ribs

Instructions
- Coat the slow cooker with nonstick cooking spray.
- Combine the brown sugar, chili powder, paprika, thyme, salt, black pepper, and cayenne.
- Rub the mixture all over the ribs.
- Place ribs in slow cooker and cover.
- Cook on LOW for 7 - 8 hours, or until ribs are tender.
- Make the Easy BBQ Sauce
- Remove ribs from the slow cooker and discard the liquid.
- Turn your broiler to low, or, turn your slow cooker to high.
- Coat the ribs with the sauce and place under the broiler (or back into the slow cooker).
- Cook under broiler for about 2 minutes, remove, re-coat with another layer of sauce, and cook for another couple minutes. OR, let ribs cook on HIGH in slow cooker for 30 minutes. IMPORTANT: Broilers vary, keep an eye on the ribs, and don't let them burn!
- Remove and serve at once, with additional BBQ sauce!
Notes
- Removing the membrane helps the ribs break apart more easily but is optional.
- Rib rub can be applied up to 12 hours before cooking; keep ribs covered in the fridge until use.
- Cook ribs on low for 7 to 8 hours; avoid cooking longer to prevent burning or mushy texture.
- BBQ sauce can be made days ahead and refrigerated up to 5 days.
- Watch ribs closely when broiling as times vary and to prevent burning.
