Description
This recipe starts by layering sliced onions in the slow cooker, providing a flavor base and moisture. A 3-4 pound boneless chuck roast is placed fat side down over the onions, then seasoned with salt and black pepper and surrounded by beef broth.
The roast cooks on low for 8 hours or high for 4, during which time it becomes very tender and easy to shred. After shredding and discarding excess fat, the shredded beef returns to the slow cooker to combine with barbecue sauce and is kept warm for around 30 minutes to let the flavors meld.
The resulting barbecue beef is moist and tender with the tang and sweetness characteristic of barbecue sauce. It works well served on buns, with sides, or as part of other barbecue dishes.

Ingredients
- 1 yellow onion sliced, large, sweet, or white onion
- 3-4 pounds chuck roast boneless
- 1 cup beef broth I use reduced-sodium, or beef stock
- salt kosher salt
- black pepper kosher salt
- 3 cups barbecue sauce or barbecue sauce of your choice, homemade
Instructions
- Add sliced onion to the bottom of slow cooker.
- Place roast over sliced onions fat side down.
- Sprinkle with salt and pepper. I use about 1/2 teaspoon each salt and pepper.
- Pour broth around the roast.
- Cover, and cook on low for 8 hours or on high for 4 hours.
- Shred meat and discard fat.
- Return meat to slow cooker, and stir in barbecue sauce.
- Let sit in sauce about 30 minutes on low.
