Slow Cooker BBQ Chicken
Description
This Slow Cooker BBQ Chicken recipe starts by placing chicken breasts at the bottom of the slow cooker, topping them with diced white or yellow onions for added flavor, and covering everything with your preferred BBQ sauce. The mixture cooks on low heat for 6-7 hours, allowing the chicken to become tender and infused with the sauce's flavors. Alternatively, cooking on high for 3-4 hours is possible if time is limited, though low heat is recommended for best texture.
Once cooked, the chicken is shredded with forks or tongs and returned to the slow cooker to soak in the sauce, allowing you to control how saucy you want the final dish. The BBQ chicken can be piled onto buns for sandwiches or incorporated into other dishes like quesadillas, wraps, or BBQ chicken pizza.
Homemade balsamic or bourbon BBQ sauces are great accompaniments to this recipe. Serving it alongside coleslaw, either a Chick-Fil-A style or a classic sweet and tangy version, adds freshness and crunch to the meal.
Ingredients
- 2 lbs. chicken breast boneless skinless
- 2 cups BBQ sauce use your favorite brand (or use homemade - see note #1 below)
- 1/2 cup diced white onion optional but recommended, or yellow onion

Prepare
- Chop onion, if using, and gather ingredients.
Slow Cook
- Add chicken to bottom of a slow cooker insert (this recipe was tested using a 6 quart slow cooker).
- Top with onion and bbq sauce, then cover and cook on LOW for 6-7 hours. For best texture, I do recommend cooking on low, but if you have to, you can cook it on HIGH for 3-4 hours.
Shred
- Remove chicken from the slow cooker and shred, using two forks or tongs.
- Return the chicken to the slow cooker and toss in the sauce. Alternately, you can add the chicken to a bowl after shredding, and add ladles of the sauce. This will allow you to control the "sauciness" level.
Serve
- Serve on buns if desired.
Notes
- Recommended slow cooking on LOW for 6-7 hours to achieve tender texture; HIGH for 3-4 hours is a quicker alternative.
- Try homemade balsamic or bourbon BBQ sauces to customize flavor.
- Serve with coleslaw such as a Chick-Fil-A copycat or classic sweet and tangy coleslaw for complementary freshness.
