Slow Cooker Beef and Broccoli

Slow Cooker Beef and Broccoli combines thinly sliced beef chuck roast with a savory sauce made from beef broth, soy sauce, oyster sauce, and brown sugar. The slow cooking tenderizes the beef over 90 minutes on low, and finishing with fresh broccoli steamed in the sauce brings vibrant color and a crisp-tender texture. Cornstarch thickens the sauce for a glossy finish. This set-it-and-forget-it approach results in a balanced dish with a sweet-savory glaze and tender vegetables, suitable for an easy family dinner served over rice or noodles.

Description

The Slow Cooker Beef and Broccoli recipe features thinly sliced beef chuck roast cooked in a mixture of beef broth, reduced sodium soy sauce, oyster sauce, and brown sugar. The ingredients meld together during a low-heat slow cooking phase, softening the beef and infusing it with rich umami flavors. Garlic and sesame oil add aromatic depth to the sauce.

After the slow cooker phase, broccoli florets and a cornstarch slurry are added to thicken the sauce and quickly cook the broccoli until crisp-tender. This layering results in beef that is tender but not overcooked, with broccoli that retains some bite and vibrant green color.

Serve the beef and broccoli mixture immediately, ideally with steamed rice or noodles to absorb the savory sauce. The balance of sweet and savory notes comes from the blend of oyster sauce and brown sugar, complemented by fresh garlic and sesame oil. The dish suits a cozy meal that benefits from slow cooking to develop flavor and tenderize tougher beef cuts.
