Slow Cooker Beef and Noodles
Description
This recipe uses a chuck roast cooked in a slow cooker with beef broth, Worcestershire sauce, and seasoned salt to infuse flavor and tenderize the meat over several hours. Once the roast is tender enough to shred easily, it is combined with cooked pappardelle noodles tossed in butter.
The slow cooking produces juicy, flavorful beef with a texture that melds well when mixed with the buttery noodles. The dish highlights simple ingredients that come together into a wholesome main course.
This dish is best served hot and can be complemented by steamed or boiled vegetables like broccoli, peas, and carrots for balanced nutrition.
Cooking times may vary between slow cookers; ensure the beef is very tender and shredded easily. For quicker cooking, cutting the roast into smaller pieces before slow cooking is effective.
Ingredients
- 2 pounds chuck roast
- 1/2 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon seasoned salt
- 1 pound pappardelle noodles
- 1/4 cup butter room temperature
Instructions
- Add the chuck roast, beef broth, Worcestershire sauce, and seasoned salt to a slow cooker. Cover and cook on low for 8 hours or high for 4 hours or until the meat easily shreds apart.
- 20 minutes before the meat is finished cooking, bring a large pot of water to a boil. Cook papperdelle according to package directions. Drain and return to pot.
- Shred the beef with 2 forks. Taste and add additional Worcestershire sauce or seasoned salt, if desired.
- Add the beef to the pot of noodles along with the butter and toss to coat, allowing the butter to melt.
- Serve hot.
Notes
- Adjust cooking time as needed since slow cookers vary; meat should shred easily with two forks when done.
- Cubing the roast before cooking reduces total cook time significantly.
- Consider adding cooked vegetables such as broccoli, peas, or carrots to incorporate some greenery into the dish.
