Slow Cooker Beef Brisket Chili Recipe

Flavorful Beef Brisket Chill is a hearty chili that brings together layers of flavors. Add your favorite toppings; sour cream, diced green onion, shredded cheese, jalapenos or salsa.

  • 1 small onion diced
  • 1 medium green bell pepper tops removed, seeded and diced
  • 1 ounce can Kidney Beans rinsed and drained
  • 1 ounce can black beans rinsed and drained
  • 1 ounce can pinto beans rinsed and drained
  • 2 ounce can diced tomatoes
  • 2 Tablespoons tomato paste
  • 2 Tablespoons tomato paste
  • 3 Tablespoons chili powder
  • 1 Tablespoon cumin ground
  • 1 teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • 2 Tablespoons olive oil
  • 2 pounds beef brisket cut into 1-inch pieces
  • 2 cups beef broth divided

Instructions

Slow Cooker Instructions

  1. Add to a 6 to 8 quart slow cooker, the diced onion, bell pepper, beans, tomatoes, tomato paste, and seasonings; bay leaf, chili powder, ground cumin, garlic powder
  2. Heat a large skillet or dutch oven over medium high heat. Add the olive oil. Season the diced brisket with salt and black pepper. In batches, place the brisket cubes into the skillet and sear on all sides until browned.
  3. Place the beef into the slow cooker. Deglaze the skillet with 1 cup of beef broth, scraping the bottom with a wooden spoon to remove any stuck on pieces. Pour the broth into the slow cooker and stir the ingredients together.
  4. Cover and cook on low for 6 to 7 hours.
  5. Remove the bay leaf and serve with your choice of toppings.

Stove Top Instructions

  1. Heat a large dutch oven over medium high heat. Add the olive oil. Season the diced brisket with salt and black pepper. In batches, place the brisket in the dutch oven and sear on all sides until browned.
  2. Add the diced onion and saute with the brisket. Add the bell pepper, beans, tomatoes, tomato paste and seasonings; bay leaf, chili powder, ground cumin, and garlic powder.
  3. Add the beef broth and bring to a boil. Reduce the heat, cover, and simmer for 3 hours or until the beef is tender.
  4. Remove the bay leaf and serve with your choice of toppings.

Notes

  • Searing the beef brisket adds so much flavor and a nice texture to your beef. However, if you need to save a little time you can skip this step. 
  • This best part of making homemade chili is that you can adjust the chili seasoning to suit your family's taste buds. Add more or less depending on your preferences. 
  • My favorite garnishes for chili are shredded cheddar cheese, a dollop of sour cream, and sliced green onions. But, you can use top it with any of your favorite toppings.
