Slow Cooker Beef Stroganoff Recipe

This Slow Cooker Beef Stroganoff features tender beef sirloin simmered with onions, garlic, mushrooms, and French onion soup, then finished with cream cheese and Greek yogurt for a creamy sauce. The slow cooking tenderizes the meat and allows flavors to meld gently over hours. It’s a comforting, creamy dish ideal served over noodles or rice, highlighting classic stroganoff elements with a creamy yogurt addition for richness.

Description

The recipe begins by browning sliced beef sirloin with butter, onions, and garlic on the stovetop briefly, seasoning with kosher salt and fresh black pepper. This mixture is then transferred to a slow cooker with sliced mushrooms and canned French onion soup, cooking on low for 5 hours until the beef is tender.

After slow cooking, softened cream cheese and plain whole Greek yogurt are gently stirred in to create a smooth, creamy sauce without breaking the beef apart. The dish is garnished with fresh parsley or chives and served over noodles or rice according to preference. The creamy texture contrasts with tender meat and earthy mushrooms in a rich, savory sauce.

Leftover stroganoff without added noodles or rice keeps well refrigerated for 2-3 days and can be gently reheated. The recipe offers a convenient slow cooker method yielding tender beef and creamy sauce with minimal active cooking time.

Ingredients

Servings
  • 3 TB butter
  • 1 onion medium sized, chopped
  • 8 cloves garlic chopped
  • 2 lbs beef sirloin sliced into strips, boneless
  • 1 tsp kosher salt
  • ½ tsp black pepper freshly ground
  • 10.75 oz French Onion Soup canned
  • 8 oz mushrooms sliced
  • 4 oz cream cheese plain, whole, fully softened
  • 8 oz plain Greek yogurt whole
  • parsley freshly chopped, or chives, for garnish

Serve with buttered egg noodles, mashed potatoes, or rice

Instructions

  1. In a large pan, heat butter over medium high heat just until hot. Add onion and garlic, stirring until translucent, 1-2 minutes. Add beef, kosher salt, and black pepper; sauté 2-3 minutes or until beef is just browned on the exterior.
  2. Transfer beef mixture into slow cooker. Add French onion soup and mushrooms. Cover and cook on low 5 hours or just until beef is tender.
  3. Soften cream cheese by microwaving it in a bowl for 30 seconds at a time, until it is fully soft. Stir to ensure it is completely smooth. Very gently stir smooth cream cheese and Greek yogurt into the beef stroganoff (don't over-stir, as this may cause tender beef to break apart.) Cover and continue to cook on low another 30-60 min. Gently spoon beef and sauces over noodles or rice of your choice. Garnish as desired.

Notes

  • Store leftover stroganoff (without noodles or rice) in an airtight container for up to 2-3 days in the refrigerator.
  • Reheat gently on stovetop or in microwave to avoid breaking apart tender beef before serving.
