Slow Cooker Beef Tips and Gravy is a perfect meal for a cool evening. Tender chunks of beef are slow-cooked in a rich, savory gravy made from beef broth, onions, garlic, and herbs.

  • 2 tablespoons olive oil
  • 2 pounds sirloin tip cut into 1-inch pieces, or beef stew meat
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 tablespoons tomato paste
  • 2 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon oregano dried
  • 1 teaspoon rosemary dried
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons cornstarch used for slurry
  • 3 tablespoons water
  • parsley chopped (for garnish, fresh

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes to the skillet and sear until browned on all sides, about 3-5 minutes. Do this in batches if necessary to avoid overcrowding the pan. Transfer the seared beef to the slow cooker. 2 tablespoons olive oil, 2 pounds sirloin tips or beef stew meat
  2. In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes. Stir in the tomato paste, cooking for another 2 minutes. 1 large onion, 3 cloves garlic, 3 tablespoons tomato paste
  3. Add the beef broth, Worcestershire sauce, dried oregano, dried rosemary, paprika, salt, and black pepper. Stir to combine. 2 cups beef broth, 1/4 cup Worcestershire sauce, 1 teaspoon dried oregano, 1 teaspoon dried rosemary, 1 teaspoon paprika, 1/2 teaspoon salt, 1/2 teaspoon black pepper
  4. Close the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  5. About 30 minutes before serving, whisk together the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the slow cooker. 3 tablespoons cornstarch, 3 tablespoons water,
  6. Cover and cook on high for an additional 30 minutes, until the gravy has thickened.
  7. Garnish with chopped fresh parsley. Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles. Fresh parsley

Notes

  • Searing the beef before slow cooking adds depth of flavor, but if you're short on time, you can skip this step. Additionally, to save time, you can just whisk the gravy ingredients in a bowl and pour it over the beef. Exclude the cornstarch until later.
  • Add chopped carrots, mushrooms, or bell peppers to the slow cooker for extra veggies and to add more flavor to the gravy.
  • If you would like a deeper and richer flavor, substitute 1/2 of beef broth for a dry red wine.
