Ingredients
- 1 lb. black beans pre-soaked overnight, dried
- 1/2 cup carrot chopped
- 2 jalapeños minced
- 1 yellow onion diced
- 3 garlic minced, cloves
- 4 oz. diced green chiles can
- 14.5 oz. diced tomatoes undrained, fire-roasted, canned
- 4 cups vegetable broth
- 2 bay leaf
- 2 tsp. cumin
- 2 tsp. ground coriander
- 2 tsp. smoked paprika
- 1 tsp. chili powder
- salt
- black pepper
- 1/2 cup cilantro plus more for garnish, chopped leaves
- sour cream optional garnish
Instructions
- Add everything to a slow cooker except for the cilantro and cook on high for 4-5 hours, or low 6-8 hours. Blend soup to your desired consistency with a hand-held immersion blender. You can make it smooth, or slightly chunky, depending on how you want it.
- Taste for needed salt and pepper, then mix in the cilantro leaves. Serve in bowls, adding more cilantro for garnish, in addition to any other toppings you desire. Enjoy!
