Slow Cooker Black Eyed Peas
Description
The Slow Cooker Black Eyed Peas recipe layers soaked black-eyed peas with diced onion, green bell pepper, minced garlic, a ham bone or hock, and chicken broth in a slow cooker. After several hours of slow cooking on high, part of the beans are mashed to thicken the liquid. Chopped ham and smoked sausage are then added, cooking another hour to meld flavors and achieve tender beans and smoky pork.
The resulting dish combines creamy beans with the smoky, savory pork flavors from the ham bone and sausage. The slow cooking method allows the flavors to develop fully, producing a rich broth and tender ingredients. Fresh chopped parsley stirred in before serving adds a fresh herbal note.
Black Eyed Peas are traditionally served with rice to complete the meal and provide a filling, comforting dish. The texture balances between creamy beans and meaty sausage slices.
For best results, soak the black-eyed peas for 4 to 8 hours before cooking to reduce time and improve tenderness. If soaking isn't possible, the cooking time may need to be extended. Using leftover ham bones from holiday meals is a good way to add pork flavor. Leftover peas can be reheated gently before serving.
Ingredients
- 1 yellow onion finely diced
- 1 green bell pepper finely diced
- 2 cloves garlic minced
- 1 lb black-eyed pea soaked for at least 4 hours, dried
- 1 ham bone or ham hock
- 5 cups chicken broth low sodium
- 2 cups ham chopped
- 14 ounces smoked rope sausage such as kielbasa or andouille, halved lengthwise and sliced
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons parsley chopped
Instructions
- Place the onion, bell pepper, garlic, black eyed peas, ham bone and chicken broth in a slow cooker.
- Cover and cook on HIGH for 5 hours.
- Uncover and remove one cup of the peas. Mash thoroughly then return to the pot. Add the ham, sausage, salt and pepper to the pot. Stir thoroughly.
- Cover and cook on HIGH for 1 more hour.
- Remove the ham bone. Stir in the parsley and serve with rice.
Notes
- Soak black-eyed peas 4-8 hours before cooking for faster and more even tenderness.
- Cooking without soaking is possible but may require longer slow cooker time.
- Use leftover ham bones, such as from holiday meals, to add smoky pork flavor.
