Ingredients
- 1 cup all purpose flour
- 1-¼ cups granulated sugar divided
- 1 teaspoon baking powder
- ¼ teaspoon cinnamon
- 1 teaspoon vanilla extract
- ¼ cup fat free sour cream
- ¼ cup 2% milk
- 2 eggs
- Non-stick cooking spray
- 1 teaspoon lemon zest
- 3 cups fresh blueberries

Instructions
- Mix together the flour, ¼ cup sugar, baking powder, cinnamon, vanilla extract, sour cream, milk, and eggs. Mix for 30 seconds until batter is creamy and no lumps are present.
- Spray the slow cooker with non-stick cooking spray and pour the batter into the slow cooker, spreading the batter evenly on the bottom.
- Wipe out the batter bowl. Then, gently mix together the 3 cups fresh blueberries, 1 cup sugar, lemon juice, and lemon zest.
- Pour the blueberry mixture on top of the batter in the slow cooker. Place the lid on the slow cooker and cook on HIGH for 2-½ hours.
- Once the cobbler is done, divide evenly among bowls and add a scoop of vanilla ice cream.
Notes
- Slow Cooker Desserts - Whenever you make a dessert in the slow cooker you risk the moisture falling into the dessert. To prevent this, as soon as the recipe is done cooking simply remove the lid as quick as possible preventing the moisture from dripping on to the cobbler.
- Blueberries - If fresh blueberries aren't in season you can use frozen.
- Toppings - Vanilla ice cream is a must to go along side of your cobbler. I also like to add whipped cream and some sliced almonds on top.
