Description

  • 4 lb pork shoulder cut into medium chunks, or butt
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce:

  • 1/2 cup butter unsalted
  • 1/2 cup brown sugar packed
  • 1/4 cup apple cider vinegar
  • 1/4 cup apple juice
  • 1 tablespoon liquid smoke
  • 4 garlic minced, cloves
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional

Instructions

  1. Add pork chunks to a large bowl, sprinkle with salt and pepper, and toss.
  2. Place a nonstick skillet over medium-high heat, add some oil and once its hot, brown the pork on each side until golden brown. Set aside.
  3. Add all sauce ingredients to a saucepan over medium heat. Stir to combine and cook until butter and sugar have melted. Set aside.
  4. Transfer pork pieces to the slow cooker and pour the sauce on top.
  5. Cover and cook on HIGH for 4-5 hours or on LOW for 8-9 hours.
  6. Serve the pork with rice or mashed potatoes and drizzle with the slow cooker sauce.
  7. Garnish with chopped parsley and rosemary before serving.
