Slow Cooker Buttery Garlic Herb Mashed Potatoes

These Slow Cooker Buttery Garlic Herb Mashed Potatoes use red potatoes cooked whole in a slow cooker until fork-tender. They are then mashed with butter, garlic, sour cream, and a blend of herbs including parsley, basil, and oregano. The slow cooking allows the flavors to meld while the herbs add a fresh and savory note, resulting in creamy, well-seasoned mashed potatoes with minimal stove-top effort.

Description

This recipe calls for chopped red potatoes cooked in a greased slow cooker on high or low until tender. Once cooked, butter and a blend of seasonings including minced garlic, parsley, basil, oregano, salt, and pepper are added along with sour cream and milk. The ingredients are mashed together with a hand mixer or masher to create a creamy, flavorful mash.

The mix of fresh and dried herbs brings an herby aroma and taste, while the sour cream adds tang and richness. Using the slow cooker frees the cook from close attention and enables hands-off preparation, with tender potatoes that absorb the buttery garlic herb spread evenly.

This comforting side dish pairs well with a variety of main courses and is suitable for casual meals or gatherings. It keeps warm in the slow cooker until ready to serve.

The recipe can be doubled for larger groups, adjusting cook time upward. Be mindful that over-mashing may cause a gluey texture; gentle mashing is best for fluffy potatoes.
