Slow Cooker Cabbage
Description
Slow Cooker Cabbage starts with chopped cabbage placed into a slow cooker along with cooked, crumbled bacon and sautéed onions. The bacon is browned with onions first to render fat and develop flavor, then the fat and cooked onion and bacon are added to the slow cooker, along with minced garlic, salt, pepper, and chicken broth. Slowly cooking on high heat for about 3 to 4 hours softens the cabbage and infuses it with the smoky, savory notes from the bacon.
The finished cabbage is tender and flavored through with the aroma of garlic, onion, and bacon grease. The slow cooker method requires minimal hands-on time and develops deep flavor with gradual heat. The broth helps to keep the cabbage moist and adds a light savory richness to the dish.
This dish can be served as a warm side alongside meats or as a comforting light meal. For a vegetarian option, omit the bacon and use butter instead of bacon grease to maintain richness. Leftovers can be stored in an airtight container in the refrigerator for up to five days.
Ingredients
- 1 cabbage cored and chopped, small head
- 8 lices Bacon cooked and crumbled
- 1/2 white onion diced
- 1/4 cup bacon grease reserved when cooking the bacon
- 1 Tablespoons garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chicken broth
Instructions
- Place the chopped cabbage in a 6 quart crock pot.
- Brown the bacon with the white onion in a large skillet over medium high heat until the bacon is crispy. Transfer the bacon to a paper towel lined plate. Chop the bacon and add the bacon, onions and bacon grease (approximately 1/4 cup) to the crock pot.
- Then top with the minced garlic, salt, pepper and chicken broth.
- Cover and cook on high for 3-4 hours until the cabbage is tender.
- Serve the cabbage with a slotted spoon and enjoy!
Notes
- For a vegetarian version, omit bacon and substitute butter for bacon grease.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
