Slow Cooker Cabbage
Description
Slow Cooker Cabbage features shredded cabbage cooked slowly with crisp bacon and browned Italian sausage. The addition of diced onion and minced garlic provides a savory base, while the apple cider vinegar introduces a mild acidity that brightens the dish. Smoked paprika adds a subtle depth of smoky flavor, complementing the natural richness of the meats. Cooking in a slow cooker allows the cabbage to become tender and well-coated with the flavorful broth made from chicken stock and rendered fats.
The texture is tender yet still cohesive, with the meat pieces dispersed among the soft cabbage. The combination delivers a savory, lightly tangy profile enhanced by the buttery richness and seasoning with salt and black pepper. This recipe suits those wanting a warming dish that highlights cabbage in a more substantial, protein-containing preparation.
Serve as a side to roasted meats or as a standalone meal with crusty bread. Leftover cabbage reheats well and can be enjoyed warm or at room temperature. Adjust the slow cooker time from 3 hours on high to 5–6 hours on low depending on your texture preference.
For firmer cabbage, reduce cooking time to 2 to 2 ½ hours. The recipe notes confirm this timing adjustment to achieve preferred tenderness.
Ingredients
- 1 medium head cabbage shredded
- 12 ounces uncured bacon chopped
- 8 ounces Italian sausage ground
- ¾ cup chicken broth
- ½ yellow onion diced
- 2 cloves garlic minced
- 2 tablespoons butter
- 2 tablespoons apple cider vinegar
- 1 ½ teaspoons smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Heat a large skillet to medium and add in the bacon and sausage. Cook until the bacon is crisp and the sausage is browned.
- Add in the onion and sauté for a few minutes until tender.
- Add in the garlic and sauté for 15-20 seconds, then remove from the heat and set aside.
- In the insert of your slow cooker, add in the shredded cabbage.
- Add in the chicken broth, apple cider vinegar, butter, smoked paprika, salt and pepper.
- Pour the bacon, sausage and onion mixture with the fat in the pan over the cabbage and cook on high heat for 3 hours or low for 5-6 hours or until the cabbage is as tender as you like it.
Notes
- For firmer cabbage texture, reduce slow cooker time to 2 to 2.5 hours.
- Cook the bacon and sausage until crisp and browned to develop flavor before combining with cabbage.
- Use the fat rendered from the meats to add richness to the cabbage when cooking.
