Slow Cooker Cabbage and Sausage
Description
The Slow Cooker Cabbage and Sausage recipe starts with roughly chopped green cabbage and browned slices of smoked sausage, such as Polska Kielbasa. After lightly browning the sausage in olive oil, its rendered fat is preserved to add richness to the slow cooker. Apple cider vinegar and chicken broth provide acidity and moisture that help soften the cabbage during a 2.5 to 3 hour slow cook on high. The seasoning with salt, black pepper, garlic powder, oregano, onion powder, smoked paprika, and a hint of crushed red pepper adds depth without overpowering the dish.
Cooking the cabbage with the sausage fat and broth allows the vegetables to absorb smoky flavors while retaining enough bite if cooked for 2.5 hours. The vinegar adds a bright note that balances the smokiness and richness. After cooking, a sprinkle of fresh chopped parsley adds freshness and color before serving.
This simple dish works well as a comforting solo meal or as a substantial side to meats. It requires minimal prep and benefits from slow cooking's melding of flavors. Adjusting the cooking time can cater to preference for cabbage texture. Leftover flavors tend to deepen after resting.
Ingredients
- 1 green cabbage about 8-10 cups, large head
- 1 12 oz smoked sausage cut into ½ inch slices - Polska Kielbasa works great, package
