Description
This slow cooker cabbage soup uses a medley of diced vegetables such as onion, garlic, carrots, chopped cabbage, celery, green beans, and bell peppers, combined with diced tomatoes, tomato paste, and low-sodium broth. Ingredients
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup carrot diced
- 4 cups green cabbage approx. ¼ head of cabbage, chopped
- 2 ribs celery chopped
- 1 cup green beans chopped in 1 inch pieces
- 2 bell pepper red, green, or orange, chopped
- 28 ounces diced tomatoes canned
- 6 cups vegetable broth or chicken broth, low sodium
- 2 tablespoons tomato paste
- 2 bay leaf
- 1 ½ teaspoons Italian seasoning
- black pepper to taste
- 1 tablespoon parsley chopped, fresh
- 1 tablespoon basil chopped, fresh
- 2 cups spinach chopped, fresh
Instructions
- Combine all vegetables in a large crock pot.
- Add canned tomatoes, broth, tomato paste, bay leaves, italian seasoning, pepper and stir to combine.
- Cover and cook on high for 5 hours or on low for 8 hours.
- Once cooked, add parsley, basil and spinach and cook for 5 minutes more.
