  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup carrot diced
  • 4 cups green cabbage approx. ¼ head of cabbage, chopped
  • 2 ribs celery chopped
  • 1 cup green beans chopped in 1 inch pieces
  • 2 bell pepper red, green, or orange, chopped
  • 28 ounces diced tomatoes canned
  • 6 cups vegetable broth or chicken broth, low sodium
  • 2 tablespoons tomato paste
  • 2 bay leaf
  • 1 ½ teaspoons Italian seasoning
  • black pepper to taste
  • 1 tablespoon parsley chopped, fresh
  • 1 tablespoon basil chopped, fresh
  • 2 cups spinach chopped, fresh

Instructions

  1. Combine all vegetables in a large crock pot.
  2. Add canned tomatoes, broth, tomato paste, bay leaves, italian seasoning, pepper and stir to combine.
  3. Cover and cook on high for 5 hours or on low for 8 hours.
  4. Once cooked, add parsley, basil and spinach and cook for 5 minutes more.
