Slow Cooker Chicken Taco Chili

I couldn’t have made this soup at a better time. I loved this because it was easy for me to throw in the crockpot in the morning, it smelled amazing cooking all day.

Ingredients

  • 1 onion about 1 cup chopped onion, medium, chopped
  • 1 (16-ounce) black beans drained, canned
  • 1 (10-ounce) Kidney Beans drained, from can
  • 1 (8-ounce) tomato sauce canned
  • 1 (10-ounce) corn kernels frozen, package
  • 2 (14.5-ounce) diced tomato from cans
  • 2 (14.5-ounce) Chili pepper from cans
  • 1 taco seasoning 3 tablespoons, package
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 ½ pounds chicken breast about 2-3 breasts, boneless, skinless
  • Chili pepper optional, chopped
  • ¼ cup cilantro fresh

Instructions

  1. To the body of a slow cooker add the onion, black beans, kidney beans, tomato sauce, corn, tomatoes, taco seasoning, cumin, and chili powder.
  2. Stir the ingredients together, and add the chicken breasts to the slow cooker and cover.
  3. Cook on LOW for 8 hours or HIGH for 4 hours, until the chicken is cooked through.
  4. Once the chicken is cooked through, remove it from the slow cooker and shred it.
  5. Return the chicken to the slow cooker and stir it in. Top with fresh cilantro and chili peppers.
