Slow Cooker Cilantro Lime Chicken

Report
Slow Cooker Cilantro Lime Chicken features boneless, skinless chicken breasts cooked gently in a tomato sauce seasoned with chili powder, cumin, and fresh cilantro, with bright lime juice adding freshness. The slow cooker method ensures tender, easily shreddable chicken infused with tangy and slightly spicy flavors, making it versatile for serving on its own or over rice.

Description

This recipe combines chicken breasts with a mix of chili powder, cumin, garlic salt, and black pepper, topped with freshly chopped cilantro and lime juice, then simmered in tomato sauce in a slow cooker. The prolonged slow cooking allows the meat to become soft enough to shred, absorbing the seasoned tomato sauce.

The flavor is a balance between the warmth of chili and cumin spices and the tangy brightness from lime and tomato. Shredded texture allows the chicken to be mixed back into the sauce for a cohesive dish. The dish can be served as is or over rice, making it a flexible option for a main course.

The slow cooker's low or high settings let you adjust cooking time, with full flavor development after hours of gentle simmering. Leftovers keep well refrigerated for almost a week, making it practical for meal prep.
