Slow Cooker Cilantro Lime Chicken Thighs Recipe

Report
Slow Cooker Cilantro Lime Chicken Thighs feature bone-in, skin-on chicken thighs cooked in a marinade of lime juice, honey, chili powder, cumin, garlic, salt, and pepper. The slow cooking renders tender, flavorful meat, finished under a broiler to brown the skin slightly. Fresh cilantro tops the dish for brightness.

Description

This recipe uses a simple mixture of lime juice, honey, chili powder, cumin, minced garlic, salt, and pepper as a marinade brushed over chicken thighs in a slow cooker. Bone-in, skin-on thighs cook on low for 4 to 6 hours or on high for 3 hours, resulting in tender, juicy meat infused with bright citrus and warm spices.

After slow cooking, the chicken is briefly broiled on a foil-lined baking sheet to slightly brown and crisp the skin, enhancing texture. Chopped fresh cilantro scattered on top adds a fresh, herbaceous note to offset the savory, tangy flavors in the marinade.

The dish provides a hands-off preparation suitable for batch cooking, with the marinade balancing honey's sweetness, lime's acidity, and aromatic spices to create a nuanced flavor profile. The slow cooker method gently breaks down the meat for tenderness while preserving skin quality through the final broil.

Leftovers can be stored refrigerated for up to five days in an airtight container.
