  • 56 ounces diced tomatoes canned
  • ½ yellow onion peeled and minced
  • 1 cup carrot peeled and diced
  • 2 cups vegetable broth
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 bay leaf
  • 4 tablespoons butter
  • 1 cup half and half or whole milk

Instructions

  1. Add all ingredients to a slow cooker in the order listed. Stit everything together.
  2. Cover the slow cooker. Cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
  3. Pour 1/2 of the soup ingredients into a blender. Cover and puree until smooth. Repeat with the remaining soup ingredients. (You could also use an immersion blender right in the slow cooker if desired.)
  4. Pour all of the soup back into the slow cooker and serve immediately or turn the slow cooker to WARM until you're ready to serve. Be sure to give the soup a stir before serving.
