Description
This soup starts by combining chicken breasts, diced carrots, onion, celery, garlic, Italian seasoning, and chicken broth in a slow cooker. After cooking for several hours to meld flavors and cook the chicken through, the chicken is shredded and returned to the pot.
Potato gnocchi and heavy cream are added near the end, cooking gently so the gnocchi become tender without disintegrating. Fresh spinach and shredded Parmesan cheese are stirred in just before serving, brightening the soup and adding richness and texture. The seasoning with salt and pepper balances the flavors throughout.

Ingredients
- 3 chicken breast boneless skinless
- 2 cup carrot diced
- 1 cup white onion diced
- 2 talks celery diced
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 pound potato gnocchi
- 2 cups heavy cream
- 2 cups spinach fresh leaves
- 1 ½ cups Parmesan Cheese shredded

Instructions
- Add the chicken, carrots, onion, celery, garlic, Italian seasoning, and chicken stock to your slow cooker.
- Cover and cook on high for 4 hours or low for 6 hours.
- Thirty minutes before you are ready to serve, turn the slow cooker to low heat. Then remove the chicken and shred it with two forks.
- Add the chicken back to the slow cooker with the gnocchi and heavy cream and cook for 30 more minutes on low.
- Right before serving, stir in the spinach and cheese.
Notes
- Store leftovers in the refrigerator and consume within 3 days for best quality.
- Vegetables can be omitted or adjusted based on preference without affecting the core soup.
