Description

  • 3 chicken breast boneless skinless
  • 2 cup carrot diced
  • 1 cup white onion diced
  • 2 talks celery diced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 pound potato gnocchi
  • 2 cups heavy cream
  • 2 cups spinach fresh leaves
  • 1 ½ cups Parmesan Cheese shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the chicken, carrots, onion, celery, garlic, Italian seasoning, and chicken stock to your slow cooker.
  2. Cover and cook on high for 4 hours or low for 6 hours.
  3. Thirty minutes before you are ready to serve, turn the slow cooker to low heat. Then remove the chicken and shred it with two forks.
  4. Add the chicken back to the slow cooker with the gnocchi and heavy cream and cook for 30 more minutes on low.
  5. Right before serving, stir in the spinach and cheese.

Notes

  • Store leftovers in the refrigerator and consume within 3 days for best quality.
  • Vegetables can be omitted or adjusted based on preference without affecting the core soup.
