Description
This chowder gathers chopped carrots, onions, potatoes, and drained corn cooked slowly in water or chicken broth, bringing out softened vegetables and sweeter corn flavor. Including both whole and creamed corn adds varied corn texture, from kernels to creamy background. Dried thyme, parsley, garlic powder, and seasoning enhance the savory depth.
Bacon cooked beforehand adds smoky richness, scattered through the soup for layered flavor. Near serving time, evaporated milk mixed with cornstarch is stirred in to thicken the chowder, creating a velvety finish without cream. Optional butter enriches the mouthfeel.
This slow cooker version requires minimal active prep and yields a warm, filling chowder ideal for cooler days. Adjust salt and pepper to taste before serving. Ingredients
- 2 large carrot chopped
- 1 large onion chopped
- 4 potato chopped
- 32 ounces corn kernels 2 cans, drained OR one small 10-12oz bag of frozen corn
- 32 ounces creamed corn 2 cans
- 4 cups water OR chicken broth
- 1 pound Bacon cooked and crumbled
- ½ teaspoon thyme dried leaves
- 1 teaspoon parsley dried
- ½ teaspoon garlic powder
- salt to taste
- black pepper to taste
- 12 ounces evaporated milk 1 can
- 2 tablespoons cornstarch
- 3 tablespoons butter optional
Instructions
- Place everything except for the evaporated milk, cornstarch and butter or margarine into the slow cooker.
- Add just enough water or chicken stock to cover the ingredients.
- Cook on high 5 hours or low 7-8 hours until vegetables are softened.
- Combine cornstarch and evaporated milk. Stir into slow cooker along with butter 30 minutes before serving,
- Taste and adjust seasoning with salt and pepper to taste.
Notes
- Canned corn sizes vary between 14-16 ounces, so adjust accordingly.
- For richer flavor and added nutrition, use chicken broth instead of water.
