Slow Cooker Creamed Corn

Ingredients

  • 8 ounces cream cheese (cut into pieces)
  • 1 cup milk whole
  • 1/2 cup heavy cream
  • 4 tablespoons butter unsalted
  • 3 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 2 pounds corn not thawed, frozen
  • black pepper to taste, freshly ground

Instructions

  1. Place the frozen corn in the bottom of a 5 quart slow cooker.
  2. Add the cream cheese, milk, cream, butter, sugar and salt.
  3. Stir everything together as best you can.
  4. Cover and cook on low for 4 hours, stirring occasionally.
  5. Season with parsley and black pepper, to taste.

Notes

  • At about 3 hours it will come together, but it won't be completely thickened.
  • Allow it to cook for the full 4 hours for the best results.

  • The sauce will thicken as it sits, so you may wish to add a little milk if you would like it to stay in the slow cooker past 4 hours.
  • You can also make this on the stove top. Combine the ingredients and set to low heat. Mix well, and mix often to prevent the milk from scorching. It makes a quick and easy creamed corn recipe.
