Ingredients
- 3 chicken breast approx. 2-2.5 lbs, boneless, skinless
- 1 yellow onion diced, small
- 2 garlic minced, cloves
- 1 jalapeño minced
- 2 oz. diced green chiles cans, undrained
- 1 tsp. cumin
- 1 tsp. chili powder
- salt to taste
- black pepper to taste
- 8 oz. full-fat cream cheese
- 2 cups vegetable broth or chicken broth
- 8 oz. cheddar cheese shredded (not bagged, pre-shredded cheese, block
- scallions optional toppings, sliced scallions, extra cheese, broken tortilla chips

Instructions
- Place the chicken in the bottom of a slow cooker, then top with everything but the cheddar cheese. Cook on low for 6 hours or until the chicken is fully cooked. Shred chicken and add cheddar cheese, stir to combine. When the cheese has melted and incorporated into the soup, serve into bowls with your favorite toppings. Enjoy!
