Slow Cooker French Dip Sandwiches

Slow Cooker French Dip Sandwiches use a beef chuck roast cooked slowly with beer, beef broth, onions, and Worcestershire sauce to create tender meat and a flavorful dipping jus. The roast is browned for a crisp crust before slow cooking, producing tender slices ideal for piling on toasted, buttered hoagie rolls topped with melted provolone. The juice from the slow cooker serves as a rich dipping sauce, making these sandwiches hearty and satisfying for casual dinners.

Description

This recipe begins by seasoning and searing the beef chuck roast in vegetable oil to develop a deep crust, which adds flavor and texture. The roast then simmers in a mixture of beef broth, dark beer, Worcestershire sauce, and diced onions inside a slow cooker for six hours on low heat. This long cooking process breaks down the meat fibers, tenderizing the roast and infusing it with the aromatic broth.

Once cooked, the beef is sliced thickly and assembled on hoagie rolls that have been brushed with butter and toasted until golden. Melted provolone cheese tops the meat layers, adding creaminess. The accompanying dipping sauce is made from the slow cooker juices, warmed and served alongside the sandwiches for dipping.

This sandwich is well-suited for casual meals and gatherings, providing a comforting combination of tender beef and melted cheese with the added moisture and flavor of the dipping broth. Preparing the roast in the slow cooker offers hands-off convenience.

Ingredients

Servings
  • 4-5 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 can dark beer
  • 1 yellow onion , diced
  • 6 hoagie roll
  • 2 tablespoons butter unsalted
  • 12 lices provolone cheese

Instructions

  1. In a large Dutch oven, or if you have an aluminum insert for your slow cooker add the vegetable oil and heat on high.
  2. Add the kosher salt and pepper to your beef chuck roast.
  3. Brown on both sides aggressively (3-5 minutes on each side).
  4. Don't move the beef before flipping (this lets the meat get a deep crust).
  5. To the slow cooker add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer, and onions.
  6. Cook on low for 6 hours.
  7. Remove the meat and slice thickly.
  8. To assemble, butter your hoagie rolls and toast.
  9. Top with provolone cheese.
  10. In a small bowl add a cup of the liquid from the slow cooker and dip the sandwich in the bowl.
