  • 2 lbs carrot peeled and sliced into 1/2 inch pieces
  • 1/4 cup butter melted, unsalted
  • 1/3 cup brown sugar
  • 1 tablespoon Balsamic reduction
  • 1 tablespoon soy sauce
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Garnish:

  • 1 tablespoon parsley chopped

Instructions

  1. Prepare and add the carrots to the slow cooker.
  2. In a medium bowl, whisk together the melted butter with the rest of the ingredients.
  3. Pour the sauce mixture on top of the carrots and toss to combine.
  4. Cook on HIGH for 3 hours or until carrots are tender.
  5. To thicken the glaze, remove uncovered on HIGH for an additional 20-25 minutes. Or mix 1 tablespoon of cornstarch with 3 tablespoons of water and add to the mixture, cook on HIGH for an additional 15 minutes.
  6. Sprinkle with parsley and serve.
