The ingredients are cooked slowly for hours, allowing the beans and vegetables to soften thoroughly and the flavors to meld.

For firmer vegetables, they can be added halfway through cooking or cut larger to slow their softening. Fresh thyme sprigs are added whole to release flavor and can be removed before serving.

  • 20 ounce bag dried bean soup mix
  • 3/4 cup onion finely diced
  • 3 carrot peeled, halved and sliced
  • 2 talks celery sliced
  • 2 teaspoons garlic minced
  • 3 prigs thyme or 1 teaspoon dried thyme, fresh
  • 1 bay leaf
  • 3 cups ham diced
  • 8 cups chicken broth low sodium
  • 15 ounce can diced tomatoes do not drain
  • salt to taste
  • black pepper to taste
  • 1/4 cup parsley chopped, fresh

Instructions

  1. Rinse the beans thoroughly; set aside the seasoning packet for later use
  2. Place the beans, onion, carrots, celery, garlic, thyme, bay leaf, ham and chicken broth in a slow cooker.
  3. Cook on HIGH for 4 hours or LOW for 8 hours, or until beans are done
  4. Stir in the tomatoes, seasoning packet, and salt and pepper to taste.
  5. Cover and cook for an additional 20 minutes
  6. Sprinkle with parsley and serve.

Notes

  • Vegetables may be cut larger or added partway through cooking for firmer texture.
  • Add fresh thyme sprigs whole; their leaves will infuse the soup and stems can be removed when serving.
