Slow Cooker Ham and Bean Soup (White Beans)

This slow cooker ham and bean soup features tender white cannellini beans and hearty diced ham simmered with aromatic vegetables like onion, carrot, celery, and garlic. Slow cooking melds the flavors of herbs such as thyme, rosemary, and bay leaves into a rich vegetable stock base, creating a comforting and filling meal. The slow cooker method allows the ham bone to infuse the soup with savory depth while the beans soften to creamy perfection, making it a practical and satisfying dish to prepare ahead and serve warm.

Description

Slow Cooker Ham and Bean Soup (White Beans) uses a spiral sliced ham bone with diced ham to provide both protein and flavor. The recipe adds white cannellini beans drained from canned goods, combined with diced onion, carrot, celery, and minced garlic to create a classic soup base. Dried herbs including thyme, rosemary, and bay leaves give subtle herbal notes to the vegetable stock broth. The ham bone is browned before slow cooking to develop caramelized flavors, then cooked low and slow in a slow cooker for several hours until the beans are tender and the flavors meld thoroughly.

The resulting soup has a hearty texture with tender beans and chunks of ham, balanced by the sweetness of carrots and savoriness of herbs. This preparation method allows hands-off cooking and deeper flavor development as the ingredients simmer gently over time. Once finished, discarding the ham bone leaves a rich, meaty broth that complements the creamy beans and softened vegetables.

It can be served as a main dish for a filling lunch or dinner, especially in cooler weather. Garnishing with fresh chopped parsley adds a fresh brightness to the warm bowl of soup. This recipe yields multiple servings suitable for leftovers, making it convenient for meal prep or family dining.
