Slow Cooker Ham and Potato Soup

This Slow Cooker Ham and Potato Soup blends diced ham, cooked bacon, potatoes, and vegetables simmered in chicken broth to create a hearty stew. A cream and flour roux thickens the broth, giving the soup a smooth, rich texture. Finished with sour cream and garnished with bacon and green onions, it offers a comforting and filling meal especially suited for colder days.

Description

Slow Cooker Ham and Potato Soup utilizes Yukon gold potatoes, diced ham, cooked bacon, and a medley of aromatics including onion, garlic, carrot, and celery cooked together slowly in chicken broth. This method lets flavors meld and ingredients tenderize gently over several hours.

The soup gains creaminess from a roux made by whisking flour into melted butter and gradually cooking with heavy cream until thickened. This mixture is added to the slow cooker then combined with sour cream, rounding out the soup with a velvety texture and tangy richness. Seasonings of salt, pepper, and dried parsley provide balanced flavor throughout.

Serving topped with extra bacon, chopped green onions, and sour cream adds texture and freshness. The soup is filling, suitable as a main dish served with crusty bread or as a warm starter for a substantial meal.

Ingredients

Servings
  • 10 lices Bacon cooked and diced
  • 2 cups ham diced
  • 5 cups chicken broth low sodium
  • 2 pounds potato peeled and diced, Yukon gold variety
  • 1 onion diced, medium sweet
  • 6 cloves garlic minced
  • 1 carrot cut into cubes
  • 1 cup celery cubed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper ground
  • 1 tablespoon parsley dried
  • 1/2 cup sour cream

Roux Mixture:

  • 4 tablespoons butter unsalted
  • 1/4 cup all-purpose flour
  • 1 1/2 cup heavy cream

Toppings:

  • Bacon cooked
  • green onion chopped
  • sour cream

Instructions

Slow Cook:

  1. Add diced potatoes, diced onion, minced garlic, cooked bacon, ham, carrots, celery, dried parsley, and chicken broth to the slow cooker. Season with salt and pepper.
  2. Stir and cook for 6-8 hours on low or on high for 3-4 hours.

Roux Mixture:

  1. Once the soup has cooked, add butter to a medium saucepan over medium heat and melt it. Whisk in the flour until completely combined, then gradually add the heavy cream.
  2. Whisk well the flour mixture, until smooth. With the heat on the lowest stove setting, let the mixture cook until it starts to simmer and gets thicker, stirring occasionally.
  3. Immediately add the cream-flour mixture to the slow cooker and stir to combine.

After the Thickening Mixture was added:

  1. Using a potato masher, mash about 3/4 of the potatoes. Let the soup cook for another 30 minutes for it to thicken.
  2. Stir in the sour cream until thoroughly combined. Season with salt and pepper.
  3. If the soup is too thick, add more WARM chicken broth. First, heat it up in the microwave until it's hot. Taste and adjust for salt and pepper.
  4. If you add more liquid, make sure to let the soup simmer for a few minutes.

Serve:

  1. Serve warm, garnished with bacon, green onions, and sour cream.
  2. Once it cools, the soup will thicken more. When reheating, add more water, broth, or milk to dilute it and simmer for a few minutes.
